ETYMOLOGY:
The name comes from いちょう (ginkgo tree), because the cut pieces resemble the fan-shaped leaves of the ginkgo tree. Sometimes written as 銀杏切(いちょうぎ)り using the kanji for ginkgo.

USAGE:
いちょう()り is commonly used for soups, stews, and curries, as the small pieces cook quickly and are easy to eat with a spoon.
