鳥肌 literally means "bird skin" (鳥 = bird, 肌 = skin), referring to the appearance of plucked poultry.

Watch out
Using 鳥肌が立つ for being deeply moved (as in examples 2 and 3) is now very common, but some speakers still regard it as a misuse: the traditional sense is a reaction to cold, fear, or revulsion.
