shabu-shabu
A Japanese hot pot dish where thinly sliced meat and vegetables are briefly swished in simmering broth and eaten with dipping sauces.
The name しゃぶしゃぶ is onomatopoeia for the sound of swishing thin meat slices back and forth in hot broth.
How IT is eaten
Thin slices of beef or pork are briefly dipped in boiling broth (usually kombu-based) until just cooked, then dipped in ponzu or sesame sauce.
