USAGE:
A cooking term. 合わせ means "combined" and 酢 (voiced form of 酢) means "vinegar." The voicing of す to ず occurs in compound words (連濁). There are many varieties depending on the dish: 二杯酢 (vinegar + soy sauce), 三杯酢 (vinegar + soy sauce + mirin), 寿司酢 (sushi vinegar), etc.
COMMON TYPES:
- 二杯酢: two-part vinegar (vinegar + soy sauce)
- 三杯酢: three-part vinegar (vinegar + soy sauce + mirin)
- 寿司酢: sushi vinegar (vinegar + sugar + salt)
- 甘酢: sweet vinegar
