USAGE:
A cooking term. ()わせ means "combined" and () (voiced form of ()) means "vinegar." The voicing of す to ず occurs in compound words (連濁(れんだく)). There are many varieties depending on the dish: 二杯酢(にはいず) (vinegar + soy sauce), 三杯酢(さんばいず) (vinegar + soy sauce + mirin), 寿司酢(すしず) (sushi vinegar), etc.

COMMON TYPES:

  • 二杯酢(にはいず): two-part vinegar (vinegar + soy sauce)
  • 三杯酢(さんばいず): three-part vinegar (vinegar + soy sauce + mirin)
