A dumpling that came from China. In Japan the default is pan-fried 焼(や)き餃子(ぎょうざ) with a garlicky pork filling, eaten with a dip of vinegar, soy sauce and chili oil, and ordered as a side with ramen or rice.

Types

  • 焼(や)き餃子(ぎょうざ): pan-fried, the usual kind in Japan
  • 水餃子(すいぎょうざ): boiled, the usual kind in China
  • 揚(あ)げ餃子(ぎょうざ): deep-fried
  • 羽根(はね)つき餃子(ぎょうざ): pan-fried with a thin crispy "wing" of batter joining them

Cultural note

宇都宮(うつのみや) and 浜松(はままつ) compete for the title of Japan's gyoza capital.
