A style of sushi where vinegared rice and toppings are pressed together in a rectangular wooden mold (()(がた)), then cut into pieces. Predates the more widely known (にぎ)寿司(ずし) (hand-pressed sushi) and is especially associated with the Kansai region, particularly Osaka.
