A style of sushi where vinegared rice and toppings are pressed together in a rectangular wooden mold (押し型), then cut into pieces. Predates the more widely known 握り寿司 (hand-pressed sushi) and is especially associated with the Kansai region, particularly Osaka.

CULTURAL NOTE:
押し寿司 is one of the oldest forms of sushi in Japan. The 鯖寿司 (mackerel sushi) of Kyoto and the 箱寿司 (box sushi) of Osaka are well-known regional varieties. It is also a popular 駅弁 (station lunch box) item.
