IN SAKE PRODUCTION:

  • 精米(せいまい)歩合(ぶあい) (rice polishing ratio) - percentage of rice remaining after polishing
  • Lower percentage = more polished = higher grade sake
  • 大吟醸(だいぎんじょう) requires ≤50% polishing ratio
