Sense 1 (taste): light and delicate, usually praise: 豆腐(とうふ), 白身魚(しろみざかな) and chicken breast are 淡泊(たんぱく)な味(あじ). Opposite: 濃厚(のうこう).
Sense 2 (character): not clinging or greedy, cool about things others fuss over: 金(かね)に淡泊(たんぱく)だ (not money-minded). It can also mean emotionally distant: 淡泊(たんぱく)な性格(せいかく), 淡泊(たんぱく)な関係(かんけい).
