wasabi, Japanese horseradish
A pungent green condiment made from the grated rhizome of the wasabi plant, commonly served with sushi and sashimi.

USAGE NOTES:
- Most "wasabi" served in restaurants outside Japan (and even in many Japanese restaurants) is actually colored horseradish (西洋わさび).
- 本わさび refers to authentic wasabi from the wasabi plant.
- Fresh wasabi is grated on a 鮫皮おろし (sharkskin grater).
